I got into an organizing mode the other day and I emptied out and rearranged our pantry. It’s so pretty and organized now. When I walk by it, I like to just stop and look at it. Right now it’s my favorite room in the house. I know. I’m a nerd.

My friend, Laura, is really cool. She is funny, a great friend, and she’s an amazing photographer. Want to know something? Laura thinks I’m cool too. She has passed along this award to me.It’s like my own little version of a gold metal! In order to accept this award, I have to tell you seven random things about myself. Here we go.
1. I eat macaroni and cheese on a regular basis
2. I’ve never sprained or broken anything…or had stitches.
3. I’ve never needed a passport. One of these days that will change!
4. I think I’m one of the pickiest eaters. Ever.
5. Despite being a picky eater, I love to look through cookbooks.

7. I think wearing socks with sandals is totally wrong.

I Wish I Was There
Hi. My name is Katie and I spend hours every day watching the Olympics.
Whew….it feels good to get that off my chest.
There is an extra special place in my heart for the winter Olympics. When the Olympics were in Salt Lake in 2002, Mark and I had the opportunity to be on the Merchandise staff at Soldier’s Hollow where the cross country skiing took place. Whenever we weren’t working, we were at home watching the other events. For those few weeks our lives revolved around the Olympics. It was so amazing to be a part of something so big.
I always enjoyed the Olympics before then, but as of that year, I was hooked. You could definitely say that whenever the winter Olympics roll around, it brings back many fun memories. One day I would love nothing more than to go to the Olympics again and cheer on the US athletes. For now, though, I am content to cheer from my couch every night….where it’s nice and warm.

Thought You’d Like To Know
Just a few reasons I’m glad Mark is coming home tomorrow….
*I stay up way to late when he’s gone. I don’t like to go to bed alone, so I avoid it. It’s not the smartest thing to do, but I can’t help it. I do it every time.
*I eat horribly. Really horribly. I am never motivated to cook something for just myself, so I end up eating the easiest thing we have. Which is cereal, obviously.
*I keep the tv on. All the time. I’m not too picky about what’s on. Sometimes I just get tired of a really quiet house. Late last night, I had the Nanny on until I went to bed. Yeah, like I said, not real picky.
*Most importantly, he’s one cool fella. I’ve grown quite accustomed to having him around….and I’d like him back please.

Back In The Saddle
Today I exercised for the first time in almost a month. So much for my goal to exercise 4 times a week. In my defense, it totally wasn’t my fault. I haven’t exercised due to my crazy ankle. I ended up having it wrapped in a gauze cast kind of a thing (yes, that is a technical term) for two weeks. It was fun…and really attractive…and itchy. Now the cast is off and life is finally getting back to normal. At least as far as my leg goes. My friend, Laura thought I should gross everyone out with some pictures, but I couldn’t bring myself to take any when it was really bad. And trust me, it was bad. All my problems started with that red spot right in the middle of my ankle. Stupid rope burn. So today, I used my cool exercise program that I got for Christmas. It was so hard to actually bring myself to do it after such a long time of not exercising…..and it totally kicked my trash.
I take all my orders from the chick on the left. It has a cameral and so that square on the right is a live feed at my poor attempts to follow her directions. Seeing myself is hilarious, which is why I only do it when I am the only one at home. No one else needs to witness that.
Hopefully she’ll go easy on me tomorrow.

I Love Food
I think in another life I could have totally been a foodie. I can easily spend hours looking through cookbooks and food blogs, dreaming of all the delicious food that I could make. I also love watching the Food Network and admiring the fancy dishes that they make. While I admire their crazy amazing dishes, I know that I will never be a fancy shmancy chef, which really, I'm pretty ok with. I can cook and I have made some tasty dishes in my day….but simple is more my cup of tea.
One of my goals this year was to come up with a meal plan and to stick with it. In my effort to do this, I have been digging through and trying to organize all my recipes. I’ve been wanting to get them all in one place and in some sort of order. So, I started a little project. A new blog just for all the recipes that I love to make….and several that I want to try. I figured that knowing how much I like finding new recipes that maybe someone else might like to see what we make from time to time. In case you are hungry and have a hankering for some food, you can check it out here. Don't expect anything too fancy, because it's not. It's just a start....major work in progress....but it's progress.
